Item for Day 3:  Meal Shuffle

My first meal of the day was spinach salad with fresh orange segments, red grapes, a small bit of chopped red onion and black currant vinaigrette.  I wasn’t quite sure how spinach in the a.m. would go down, but it was very enjoyable.

Lunch consisted of what would be a regular supper of mine.  I was inspired by some leftover sauce from a recipe for spicy curry kale chips that I made.  I used a recipe from choosingraw.com.  (Here’s the link for the kale chip recipe:  http://www.choosingraw.com/spicy-curry-kale-chipsraw-and-vegan  )I made brown rice. I stir fried onions, mushrooms, celery and an orange coloured pepper.  I made a ‘gravy’ by melting some coconut oil, adding flour, then stirring in some almond milk.  To that, I added the left over spicy curry sauce.  I then mixed it all in a bowl and added some canned black beans.  It was awesome!  Spicy Curry Rice Bean Bowl it will be called from now on.

I usually have fruit for breakfast.  After a busy day, I was feeling not too thrilled about fruit for supper.  I considered making a tofu scramble or pancakes or something, but that wouldn’t be a ‘usual’ breakfast for me, unless it was a Sunday, but then it would be brunch.  Promising myself I could have popcorn later if I’m still hungry,  I decided to make a juice/smoothie.  I juiced an apple, an orange, a lemon (I don’t like the pulp of these in my smoothie – it becomes a ‘roughie.’) and a bit of fresh, raw ginger to give it some zip.  To that juice I added a ripe banana, some blueberries and a dollop of date paste (raw, pitted dates, soaked in water then blended smooth.  It's like caramel sauce!).  It was so good.  Very tasty and surprisingly satisfying.  Mysteriously I don’t feel all tired and full?!

Mixing up the order of meals today and knowing I was going to write about it made me think about what to eat a little more than usual.  My meals have become pretty routine (read: boring!), so today I put some extra effort and creativity into what I prepared.  I’ve now got some new ideas and recipes to add to my repertoire.  I’ve also discovered that I can break the ‘rules’ about what constitutes a breakfast, lunch or dinner which feels very liberating.  The options are endless and exciting.

Did anyone else try this today?

Tomorrow:  Drive to a different neighbourhood for walk/run.

You have fruit for EVERY meal. I said I wasn't looking forward to a dinner of fruit, but I went ahead and did it - which is the demonstration of 'not a wimp!'
and I said I liked it.
